CRAZY CLAFOUTIS
Crazy Clafoutis

What you need

For the clafoutis:

  • 125 g fresh cream
  • 12.5 cl milk
  • 3 small eggs
  • 75 g sugar
  • 1 pinch of salt (3 g)
  • 50 g flour
  • 12.5 g butter
  • 5 cl GRAND MARNIER® liqueur®
  • 15 g butter to line the cake tin


For the apples:

  • 100 g apples cut into 1 cm strips
  • 2 knobs of butter (8 g)
  • 10 g sugar
  • 1 tablespoon currants (15 g)
  • 1/2 teaspoon grated orange zest (2 g)
  • 2.5 cl orange juice
  • 2 tablespoons GRAND MARNIER® liqueur

How to make it

Preparation time: 25 min:

Bake for: 25 min

  • Melt the butter and sugar in a pan. Cook the apples for 5 min, adding the raisins and zest. Incorporate the orange juice and GRAND MARNIER® liqueur and cook for another 5 min. Leave to cool and put at the bottom of a buttered baking dish.
  • Preheat the fan oven to 170°C. Mix the flour, salt and sugar. Add the eggs, cream, milk, GRAND MARNIER® liqueur, and last of all, the melted butter. Pour over the apples and cook for 20 min

Chef's tip

For a truly melt-in-your-mouth taste, make sure to cook the apples until they are really soft.
