WINTER FRUIT GRATIN
Winter Fruit Gratin

What you need

For the macerated fruits:

  • 3 kiwis
  • 3 clementines
  • 2 bananas
  • 4 cl GRAND MARNIER® liqueur®


For the gratin:

  • 3 eggs
  • 60 g sugar
  • 3 cl GRAND MARNIER® liqueur®

How to make it

Preparation time: 15 min:

Bake for: 5 min

  • Slice the bananas, dice the kiwis and halve the clementine quarters. Mix with the GRAND MARNIER® liqueur.
  • Beat the egg whites, gradually adding the sugar as you go. Add the GRAND MARNIER® liqueur then the yolks, beating the whole time. Do not whip too much because the gratin will collapse and go runny!
  • Mix gently with the fruit. Set in a dish and grill until beautifully golden brown all over. Serve immediately.

Chef's tip

You can use whatever fruits you like. In the summer, use strawberries and raspberries. If you don't have a grill, it doesn't matter, you can use a kitchen blowtorch to brown. This will release flavours concealed during the GRAND MARNIER® maturation stage in oak barrels.
