BAKED PEARS
Baked Pears

What you need

  • 3 ripe Comice or Williams pears
  • 50 g sugar
  • 40 g butter
  • 15 cl orange juice
  • 2 teaspoons corn flour (5 g)
  • 8 cl GRAND MARNIER® liqueur®
  • 1 vanilla pod

How to make it

Preparation time: 15 min:

Bake for: 10 min

  • Peel the pears, halve them and remove the pips, keeping the stalk if possible (for presentation).
  • Put the sugar on the pan and warm it to caramelise.
  • Mix the orange juice and corn flour together and add to the sugar, then the butter, stirring gently. Split the vanilla pod in two, scrape the inside thoroughly to extract all the vanilla seeds and add.
  • Boil for 3 to 4 minutes, add the pears and GRAND MARNIER® liqueur. Leave to simmer for 5 minutes, coating the pears.
  • Pour in a bowl, cover with cling film and microwave at 700 watts (average) for 3 to 4 minutes. The time needed will depend on how ripe the pears are. Leave to cool without removing the film.
  • Reheat in the oven (or microwave) coating the pears. Set in a dish and serve immediately.

Chef's tip

You can make this dessert with apples. Choose apples which withstand cooking well, such as Royal Galas, Golden Delicious or Granny Smiths according to taste, and only cook for 2 to 3 minutes in the microwave. You can replace the sugar with shop-bought caramel. You'll taste the orange tang of the GRAND MARNIER® only as you swallow. It serves to beautifully balance the fresh pear and well-rounded vanilla flavours.
